Sun soaks from the large window of the coffee shop, playing with the gauze curtains to create a golden aurora borealis. The air filled with roasted arabica, can bring a momentary sojourn to any mood.
The charming voice of the charismatic barista alerts me to her question.
"Why would you skim?"
Its crema. It's bitter.
(Knowing smile)
The joy is when you stir it. The bitter is also a part of the espresso, journey of beans. What you taste is the evolution, smooth, dark, bitter, a culmination of the perfect blend.
Savor it, dear.
Let the bitter perfect you.
