My Christmas cake’s reached the last few meagre slices. They say the proof of the pudding is in the eating... and the same goes for my cakes... there’s always plenty of proof... 40% Proof!

To encourage moistness, I tend it during adolescence, keeping it well fed, just like Mary, Delia and Mrs Beaton suggest. I’ve been told that maybe in my enthusiasm to practice good parenting, I tend to overfeed, although my attempts to substitute with panettone always fail.

But Christmas cake shouldn’t hang around long. I fear that evaporation now, in lifting its spirits, has made my spirits weak.

    Thanks Frenchie. I bake a lot... and we got through my first Christmas cake so quickly that I decided to make another to share with my mates on the golf course... so I made two more😬. My main problem is that when I cook, I cook in bulk (typical man!). The Seville oranges are available now for a very short season and I make marmalade in bulk... enough for the whole year. January’s always very busy 😁

    Mrs H is good thanks Frenchie. It was rather touch and go for her a couple of Christmases ago when a routine gall bladder operation went wrong and Christmas was cancelled🥴
