Royal celebrations over
I’m celebrating yet
Coronation Chicken sandwich
(Recipe from the Internet!)

It doesn’t need whole chicken
(We only use the Crown!)
And my sandwich from leftovers
Is nicely going down!

It is the third appearance
‘For six’, said the recipe
And that’s divisible by two
For my lovely wife and me.

I liked the Coronation
All the regal pomp and stuff
But best its eponymous poultry dish
Of which I can’t get enough.

And I dreamt of countless chickens
Marching down The Mall with glee
All dressed in cloaks of spicy sauce
Before coming to us for tea!

Coronation Chicken is fab-u-lus! It’s a cold dish with a spicy Indian sauce and chopped apricots. It’s brilliant in what we in the UK call a sandwich (i.e. not a burger bun but two slices of a sandwich loaf - square!). Easy to make and hard to resist!😁
