Nevilles Seville #1

INGREDIENTS AND PROPORTIONS:
Seville Oranges (whole) 1lb
Granulated sugar 2lbs
Water 2 pints
Lemon (whole) 1

METHOD:
Halve and juice the Seville oranges. There might not be much juice but try to get it all out. Scrape out as much pith/other material from each half orange shell as comes out easily leaving the peel intact. Put all the scraped out pith etc., including the pips, into a medium saucepan.
Similarly, juice the lemon and do the same.

Cut the orange peel shells in two again. Slice the peel into 1-2 inch long strips an eighth of an inch(ish) wide.

    I invariably double-up these ingredients or multiply by 2.5, which makes 9, 10 or 11 Ilb jars.

    If you simply can’t get real Seville Oranges, you can make a loose approximation by combining sweet oranges, limes and grapefruit. This might go some way to get close to the characteristic bitter twang of the Seville.

    PS- I tried an orange mug cake, keto version and easy 10 minute task it could go with your tea time Earl Grey's. But none as you stated above, I boiled the orange for about 20 minutes and just removed the pips kept the pith and rind intact. It turned out a little bitter but a sweet tea would be just fine.
