The history of fortune cookies is an odd one. They aren't Chinese at all. They started in Japan and then came to the USA in the late 1800s-early 1900s when people from Japan migrated here. A lot of Japanese immigrants opened Chinese restaurants because they knew Americans weren't keen on eating raw fish. But when WWII happened and we put Japanese Americans in internment camps it shifted to Chinese entrepreneurs opening restaurants and continuing the tradition.

You just ticked something off my list.
I'm not sure but there was an article or vlog on how japanese evolved with sushi in America because they wrap the sushi with sea weed traditionally. But what you get in the States are inside out version seaweed inside and rice outside.

Yeah, I guess it just took a while for Americans to warm up to the idea of raw fish. I wouldn't eat it, though.
